Tips
- Tip: To freeze, prepare lasagna but do not bake. Cover tightly with foil and freeze. Bake frozen lasagna uncovered at 350°F. for 1 hour 15 minutes or until hot. Or, refrigerate 24 hours to thaw. Bake thawed lasagna uncovered at 350°F. for 50 minutes or until hot. Let stand for 10 minutes.
- You can also follow this recipe to make 2 smaller lasagnas instead of 1 large. Use two 11x8x2-inch baking dishes and divide the beef mixture, noodles, cheese mixture and cheese between them. Enjoy one right away and freeze the other for later.
- To simplify the prep, you can use uncooked lasagna noodles in this recipe. Heat the oven to 350°F. Assemble the lasagna as directed, then cover the baking dish. Bake for 45 minutes. Uncover, then bake for 15 minutes or until hot.

Step 1Stir the ricotta cheese, 1/2 cup Parmesan cheese and eggs in a medium bowl and set it aside. Season the beef as desired. In a 3-quart saucepan over medium-high heat, cook the beef until it’s well browned, stirring often to break up the meat. Pour off any fat. Stir the sauce in the saucepan.

Step 2Spoon 2 cups beef mixture into a 13x9x2-inch baking dish. Top with 4 lasagna noodles, half the ricotta cheese mixture and half the mozzarella. Repeat the layers. Top with the remaining 4 lasagna noodles, remaining beef mixture and the remaining Parmesan cheese.

Step 3Bake at 400°F. for 30 minutes or until the lasagna is hot. Let stand for 10 minutes before cutting.

Easy recipe
If you want a genuine Italian lasagna recipe, this isn’t it. I love authentic Italian, but I don’t like to go to the store for 20 ingredients just for one dish. I have been looking for an easy recipe for a while now. This was perfect and my husband and daughter loved it! It takes no time and it tastes great. It’s also very good leftover, if not better! I’ve already passed this one onto my mom and I can’t wait to make it again.

Fennel!
If you want to add an Italian flavor and don’t want to use 1/2 sausage and 1/2 ground beef, add some fennel to your sauce.

I can’t get enough of this lasagna!
I have made everything from the basic recipe to adding slices of heirloom tomatoes, baby spinach and portobello mushrooms between the layers and it is so good!! Many of my friends who only like the plain recipe love that this can have such variety and still be delicious!!
