I don’t know about you guys but all I want when I’m sick is a nice bowl of chicken noodle soup. Sadly, for those of us who are gluten-free, this can be hard to come by. Well, at least a decent tasting one.

I love the flavorful chicken broth that this recipe makes and all of the yummy fresh herbs I put in the soup. It is like a hug in a soup, just like our Gluten-Free Cream of Chicken Soup. The tender chicken mixed with the vegetables is the perfect combination.

What you need

Something that I love about this gluten-free chicken noodle soup recipe is that you most likely already have all of the ingredients you need. It is an easy recipe and has simple ingredients.

Leftover rotisserie chicken

Rotisserie chicken is the best because it has so many uses. You will want a whole leftover rotisserie chicken, even if there is only a bit of meat left on it. With rotisserie chicken, you get all of the delicious types of chicken, unlike with chicken breasts.

My family is split when it comes to white meat and dark meat, so rotisserie chicken meat offers a perfect compromise. Sometimes when I am making this homemade chicken soup, I’ll snack on some of the chicken thighs.

Gluten-free spiral pasta

Gluten-free pasta noodles are a lot better than some may think. There are a lot of options, such as rice noodles or chickpea pasta noodles. Gluten-free noodles cook differently than regular noodles, so make sure to pay attention to the instructions.

For this delicious soup, you can use whatever type of gluten-free noodles you want, but I find that the spiral pasta works the best and is the tastiest. I use the same noodles in my Gluten-Free Mac and Cheese (Instant Pot) recipe.

Lemon juice

I love adding just a little bit of lemon juice to freshen it up. The best part about this meal is you can make it with hardly any ingredients. It gives you big flavor too.

How to make it

  • Pick all the meat off the chicken you can and set aside
  • Place whole leftover chicken in a large soup pot and cover with water
  • Cook over medium heat 1-2 hrs. or until falling apart
  • With large slotted spoons remove chicken from water (now broth) and place on a plate
  • Pick chicken off again
  • You should be able to get even more now (even when you thought it wasn’t possible) that the bird is so soft
  • Shred the chicken
  • Using the slotted spoons, remove all leftover chicken skin, bones and fat from broth and discard Place shredded chicken in broth along with all other ingredients except noodles
  • Let cook until veggies are soft but not falling apart
  • Add noodles and cook an additional 10 minutes or until noodles are soft

Does Campbell’s make gluten-free chicken noodle soup?

In the United States, there are no gluten-free Campbell’s soups at the moment.

What chicken stock is gluten-free?

There are plenty of gluten-free chicken stock options. Kettle & Fire, Swanson, and McCormick are just a few brands that offer gluten-free chicken stock. Always check the nutritional values and ingredients list before consuming though, just to be safe.

How do you store the leftovers?

Take your leftover soup and place it in an airtight container. Put in the fridge and it can last up to four days.

Can you freeze it?

Absolutely! The best way to freeze chicken noodle soup is to freeze it without the noodles. If you freeze the soup with the noodles, it can become soggy. So, freeze everything else besides the noodles and cook up some gluten-free noodles when you are ready to eat. It can last in the freezer for 4-6 months.

This gluten-free chicken noodle soup was one of the first recipes I did on my old blog 8 years ago! I have decided to give it a boost for you all. This soup is perfect for those cold days or when you have the sniffles.

Ingredients

  • 1

    leftover whole rotisserie chicken
